Can you believe that it’s February already? This means we’re already on month two of 2014!

January went by a bit faster for me this year. I can suppose it’s because of that Accounting class I’m taking right now. The class is a bit hard for be since it’s part two to the first accounting class I took, which was back in fall 2012. Otherwise, I’m doing well for the most part- I have exactly a 90.00% as an overall grade for the class and hopefully it stays that way or goes up. Thankfully, this 5-week course ends on this upcoming Thursday. After that, I have a week off from class and then my spring semester starts.

Without a further ado, here are some food highlights within the past eight days~

The other week, my boyfriend and I went out for some Mexican seafood. He ordered some shrimp tacos while I ordered a shrimp cocktail (a simplified name in my pov). I had both meals on my side for picture purposes. The cocktail had shrimp, octopus, abalone, avocado, and tomato sauce. It was so delicious ☺☺. I want to learn how to make this one of these days.

For the past two Saturdays, my dad and I went out to eat Vietnamese food: pho and broken rice with assorted meat. I liked it though I couldn’t finish the rice platter in one sitting so I took ¾ of it to go *o*. Though the portion size was really good for $10.

Yesterday, I wanted to try making something new to eat. I originally wanted to make a smoked salmon bagel but substituted bagel for toast instead since I have a lot of that at home. I used cream cheese, avocados (mashed in the picture), tomatoes, cucumbers, and of course- the smoked salmon in this simple meal. Most of the toppings are hiding under the smoked salmon in the picture but it’s all there. I made a couple of these for my boyfriend (with scrambled eggs + salt and pepper) and he liked it ☺. Now to make it “instagrammable”, haha.

Coming up this week, I have a group presentation for the manufacturing project on Wednesday and a final on Thursday for accounting. In the project, my group is supposed to come up with the manufacturing costs with making a skateboard and it’s going on pretty good since we’re usually on top of things.

    Good luck with your accounting course, Nancy! Better you than me. I avoided ALL economic/accounting classes in uni because I knew I’d do HORRIBLY in them. Yeah, numbers and I never liked each other much . . .

    And om, nom, nom! Those food pictures . . . *drools* That shrimp cocktail dish looked so unique! I never saw anything like that, but it looks delicious!

    The Vietnamese food look great, too. I need to go get some pho! I miss them!

    Your salmon thing look good, but I discovered I hate smoked salmon, which made me said since I wanted to like them and be a true NYer by eating bagel, lox, and cream cheese LOL. But anyway, what you made look good! Yum!

    This year has definitely been going by fast. I moved to a new city and things have been moving fast every since! Good job on the accounting class.

    I’ve never actually had a shrimp cocktail. I do love shrimp tacos, I’ve had them from 2 different restaurants. I’ve been making new foods as well, much less expensive than eating out everyday. lol

    I’m literally starving myself to shreds over here and this post is just TOO BEAUTIFUL. You don’t even understand all the envy evaporating off me right now. The shrimp tacos look divine. I forget how generous the portion sizes are in the UK. How much was that? Because last time I got Mexican food (from a non-chain) it was 2 small tacos for £4 (~$6). I love a good smoked salmon bagel, but I don’t know if I could substitute the bagel for toast. Bagels are sacred!

    I took an accounting course once, I didn’t really like it, but it really did help me out a lot in the years following running my own business and whatnot. Good luck with your accounting final on Thursday.

    Ugh, I really need Feb to speed itself up. I want my exams and deadlines to be over ;___; it’s taking too slow, LOL I want March to come fast…where the good movies in cinema also jump in during March xD

    wow, man… girl, you must have an over 3.00 for GPA! djkhfwlk how do you even– T0T i need your brainnnn lol *zombie mode*

    TACOSSSS *o* I wanna eat various kinds of tacos but it’s hard to find mexican cuisine here 🙁 there are countless of international, fusion and french/italian dining places but never really the others like mexican or spanish or german/bavarian. sigh.
    the other day I ordered a shrimp cocktail from a french restaurant but they didn’t serve it that way, with a giant glass like that… it could have been a lot more interesting to “drink” a seafood menu xD

    wow, the portion of that broken rice is.. A LOT. is it mostly pork though? it reminds me of chinese mixed rice where 90% of it is pork and ugh x__x lol
    still, vietnamese food is awesomee <3 just like thai's *o* I love vietnamese but it's not easy to find a vietnamese restaurant here either. sigh. I love pho :3

    ah~ you made an opened sandwich <3 I love toast and I love overloading it with lettuce and tomato and salmon and cheese. I don't use avocados or cream cheese though… for some reason the idea of cream cheese screams fat to my head and it scares me. maybe it's not extremely fattening but still… cream and cheese sound really dangerous in my mind haha

    and I mostly used either raw salmon (yes, sashimi lmao) or poached salmon. a recommended "ingredient" for your sandwich is butter lettuce <3 it tastes different than normal romaine lettuce xD

    well, anyway… good luck for your presentation. i have 3 presentations too 🙁 two being due on feb 10 sigh.. good luck to both of us, i guess

    Time is flying!!! That’s the same thing I said to myself when I looked at the calendar today! I can’t believe we are already in February!

    That food looks so good!!! I think I want to try the smoked salmon bagel. Good luck in your accounting class 😉

    Yummm, that shrimp cocktail looks spectacular. I love, love, love shrimp cocktails! & Don’t you just love the portions at Vietnamese establishments? Haha. It’s such a steal for the price! I can never finish the whole thing in one sitting either (unless I’m super hungry).

    I love that smoked salmon bagel, btw. Best lunchtime/snack ever. I usually make mine on toast too, except without avocados and tomatoes, and…cucumbers. Y’know what mine’s probably just smoked salmon and cream cheese x) super simple.

    Your class is ending so soon! 🙂 Good luck on the presentation and the final this week! I’m glad you guys are on top of things. 😀

    It is pretty crazy how fast time flies. But hopefully it’s been flying in a good way 🙂

    And yay for food pics! Your homemade smoked salmon toast reminds me I REALLY wanted to go back to this one donut shop and try their famous smoked salmon bagel sandwich hehe…totally forgot about it and I had wanted to try it a few months ago!

    Yum, those all look tasty! I wasn’t expecting so much in something named “shrimp cocktail”, haha. I also don’t see octopus and abalone in many dishes, and those are good.

    I always alternate between pho and broken rice dishes at Vietnamese places. They’re so filling and satisfying, especially when it’s cold outside 😀

    I saw your photos of the toppings with toast! They looked really good. I think substituting toast is a good idea. I actually prefer toast over bagels and didn’t think about trying bagel toppings on it 🙂
